I have been waiting to cook cream soup for a long while since I have discovered that I can substitute milk/thick cream with soya milk. I decided to try my own recipe and not puree the vegetables into the liquid form.
So I have turned it into a simple soup dish instead with bacon, onions, celery, garlic (1 clove), carrots and soya milk. For seasoning, I used all purpose seasoning (McCormick), dried basil and black pepper. I grilled the bacon in the frying pan, remove it from the pan when they turn brown and lightly crispy. Next I add the vegetables in the following sequence, onions, garlic, carrots and lastly celery and sauteed them in the pan. When the vegetables are almost ready, I prepared a saucepan with soya milk at low heat. Before the soya milk boils, the sauteed vegetables are transferred to the saucepan which is cooked at low heat before I turned up the heat to bring it to a boil. The bacon is added the mixture before I turn up the heat.
It looks a little dry cos the soya milk is soaked up by the vegetables so I plan to put more soya milk into the mixture when I heat it up for my lunch tomorrow.
